Unlike most Cabernet Sauvignon producers, Jason and Hilary Driscoll do not start with a production target. They begin by chasing exceptional vineyard sources, then stay with the wine through the cellar and let quality decide what gets bottled. Production follows the fruit. That reversal is what defines Hibou. In the cellar, those grapes meet Keith Emerson and Jason, working side by side. Emerson, who has made wine at Vineyard 29, joins Jason in a method that skips any fixed recipe. Native yeasts start the fermentation. Hand punchdowns gently extract the fruit. Minimal racking leaves the wine largely undisturbed. Their aim is straightforward: protect the individuality that made the fruit worth pursuing in the first place. The result is a Sonoma Cabernet Sauvignon built on serious sites, tiny production, and focused winemaking pointed at quality rather than volume. At $36 against a $95 retail price, it is the kind of bottle we still get excited to share before the rest of the market notices.
