There is rare Burgundy, and then there is En Redrescul. This tiny Savigny-lès-Beaune Premier Cru is a Domaine Doudet monopole, meaning the family is the sole owner of the vineyard, a parcel of roughly 0.65 hectare planted to Chardonnay. More unusually still, Doudet-Naudin identifies En Redrescul as **the only Premier Cru in the appellation devoted exclusively to white wine**. It is also the steepest vineyard in Savigny-lès-Beaune, so precipitous that tractors cannot work it. The vines must instead be tended by hand and the parcel plowed by horse, an almost anachronistic necessity imposed not by romance, but by the physical reality of the site. That slope is fundamental to the wine’s identity. The vineyard faces east to northeast over predominantly clay-limestone and chalky, gravelly soils, and Doudet farms it using lutte raisonnée , or reasoned viticulture. Harvest is conducted by hand, with the fruit selected again on a sorting table at the winery. The Chardonnay is gently pressed pneumatically, settled and begins fermentation in stainless steel before moving into the cellar and oak barrels for maturation. It is a deliberately traditional approach, built around preserving the character of a parcel whose scale and topography leave little room for shortcuts. The personality Doudet-Naudin describes is exactly what such a site suggests: mineral, fresh, fine and tightly drawn, rather than simply rich. The wine shows white fruit, lemon, nuts and stony notes, with restrained oak framing rather than dominating the Chardonnay. There is power underneath that freshness, but also balance, persistence and a distinctly mineral finish that gives the wine its own identity. In a region obsessed with individual parcels, En Redrescul offers something unusually literal: one family, one tiny Premier Cru vineyard, one grape variety, and a slope so severe that much of the work still has to be done the old-fashioned way.
