Alma de Cattleya may be Bibiana González Rave’s more approachable label, but there is nothing casual about the woman making it. Born in Medellín, Colombia, González Rave left home to study winemaking in France, ultimately earning degrees in viticulture and enology before building a career that has taken her through Bordeaux, Burgundy, the Rhône and California. Alma, Spanish for “soul,” was created to bring that experience to wines intended for everyday drinking. The 2025 Sonoma County Sauvignon Blanc is exactly that proposition: serious winemaking without the serious-wine ceremony. The fruit comes primarily from the Russian River Valley and Sonoma Coast, two cool, Pacific-influenced corners of Sonoma County. Grapes are harvested at night, immediately sorted at the winery and pressed, with the juice allowed to settle overnight before fermentation in a combination of neutral oak barrels and stainless-steel tanks. The approach is designed to preserve Sauvignon Blanc’s intense aromatics while building enough texture to keep the wine from becoming merely sharp and citrusy. It’s a thoughtful middle ground: freshness intact, but with something to hold onto. That precision comes through vividly in the glass. The 2025 leads with fresh-cut melon and Key lime, joined by citrus and subtle lemongrass, while crisp acidity runs through a distinctly chalky texture. It’s bright, mouthwatering and built to invite another sip rather than demand contemplation. That may be the best expression of González Rave’s idea for Alma de Cattleya: take the experience of a winemaker with an extraordinary résumé and put it into a Sonoma Sauvignon Blanc whose greatest ambition is simply to be delicious.
