The 2023 Jean et Sébastien Dauvissat Chablis Premier Cru Montmains is a classic, beautiful expression of Montmains, beginning with crystalline minerality, fresh orchard fruits, delicate floral nuances of elderflower, green apple, lemon zest, white peach, and freshly crushed oyster shells. On the palate, the wine is bright and precise, with juicy green apple and ripe pear framed by vibrant acidity and distinctive chalky minerality and saline freshness. The texture is silky and poised, delivering finesse with an energetic, refreshing core.

About This Wine

Montmains is not the soft side of Chablis. Jean & Sébastien Dauvissat describe this Premier Cru’s deep, clay-rich soils as producing wines that begin life strict and closed, built for time rather than immediate charm. Their parcel is just 0.76 hectare, planted to vines averaging 62 years old. In 2023, those old vines yielded only 43 hectoliters per hectare, with the fruit harvested on September 19. The result is a tiny production: just 4,300 bottles and 50 magnums from one of the left bank’s most distinctive Premier Cru sites. That old-vine concentration meets a terroir the domaine characterizes as particularly stony, giving Montmains its pronounced mineral expression and a palate notable for both roundness and breadth. This is 100% Chardonnay, but Chardonnay here is really a conduit for place. Montmains lies southwest of the town of Chablis on the left bank of the Serein, where the Premier Cru slopes are rooted in the limestone-and-marl geology that made this small corner of northern Burgundy famous. The Dauvissat family’s own description captures the intriguing contradiction of the site: deep clay brings substance and amplitude, while its stony character gives the wine a distinctly mineral imprint. Most telling is what Jean & Sébastien Dauvissat say about time. While their village Chablis can be enjoyed young, they recommend allowing the Premier Crus, including Montmains, at least five years to reach their fuller potential, and specifically give Montmains an aging horizon of 10 to 15 years. That tells you what kind of Chablis is in the bottle. This isn't built simply around youthful fruit or easy refreshment; it comes from 62-year-old vines, a minuscule parcel and a Premier Cru terroir prized for structure, depth and longevity. Only 4,300 bottles were made in 2023, making this a remarkably small glimpse into Montmains through one of Chablis' longtime family domaines.
