Robin Akhurst took the long road to this bottle. Before creating Apsara, the Scottish-born winemaker worked eight vintages around the world, including time with Anne-Claude Leflaive, Thomas Brown and Mike Smith. Those experiences led him to Sonoma, where Apsara is devoted to wines built around what he calls balance, purity, and expression. His 2023 Petaluma Gap Chardonnay is serious Chardonnay at a price that makes it easy to try. The fruit comes from the base of Sonoma Mountain, where the Petaluma Gap funnels cool coastal air and fog inland. Cool mornings slow ripening, and the 2023 season brought the Chardonnay to a September 20 harvest. The grapes were picked by hand and brought into the winery with the freshness Akhurst wanted intact. From there, Akhurst keeps the cellar work measured: spontaneous barrel fermentation followed by eight months on the lees in French oak. The approach builds texture.
