Yves took over the family estate in 1985 with a determined focus on organic farming, as he believed this was the only way to give the terroir of Santa Duc's vineyards their authentic voice. Les Saintes Vierges is a lieu-dit, or specially named place, planted with Grenache, Mourvèdre, and Counoise, and the average vine age is 70 years old. Exemplifying precision in every production stage, the winemaking team meticulously selects and sorts grapes by hand and ferments them in stainless-steel thermoregulated vats. Aging occurs in 3600-liter Stockinger oak foudres and 800-liter terra-cotta amphorae, accentuating the wine's fruity and spicy attributes. This results in an enchanting palate with an ethereal texture and unforgettable finish.
