Pascal Bouchard’s Vielles Vignes Chablis arose from Kimmeridgian soils formed 150 million years ago beneath the sea, shaping the wine’s identity. Equipped with state-of-the-art equipment adapted to Chablis production at the highest level, the winery’s cellar has small tanks for single-plot micro-cuvées and larger ones for consistent quality. Their Chablis VV is aged ten months on the lees, contributing texture and depth without masking classic Chablis minerality and freshness.

An intriguing Chablis from old vines made with some extra lees ageing in old casks which has added an additional layer of complexity to the vibrant, fresh, concentrated citrus fruit characters on the palate. The standard Chablis is ‘classique’ and this Vieilles Vignes bottling takes the wine to another level. Plenty of precision and potential for ageing here. Drinking Window 2021 – 2026.”
