Bloodlines run deep in Burgundy’s Côte-d’Or; Fabien Coche’s father is a first cousin of Jean-Francois Coche-Dury, one of the most revered names in Burgundy, whose Montrachet wines top $5,000 per bottle. Fabien owns 12 hectares around the village of Meursault, and his Les Combes Vineyard sits up the hill from Montrachet in Saint-Aubin. The wine shows off his learned skills as a fourth-generation vigneron, perfectly balancing regal elegance with Saint Aubin’s distinct fluidity and textural richness.
Positioned between Chassagne and Puligny’s villages, Saint-Aubin sits in the purlieus of the world’s most preeminent Chardonnay region. Granted appellation status in 1937, Saint-Aubin has 30 premier cru parcels and is distinguished for producing richly textured White Burgundy.
Fabien Coche makes each decision surrounding his farming and winemaking to produce the purest, undiluted representation of his vineyards. His white wines undergo a very long and slow fermentation, extracting each nuance before resting for around 18 months in primarily neutral barrels.
